Week of May 29th

Happiest Memorial day to all. We are remembering and honoring people who have died while serving in Armed Forces and super thankful to everyone that’s helped keep this country free.
I’m also thinking about all the workers here on the farm who don’t really get to celebrate many holidays throughout the year. These guys work 50+ hours a week regardless of the weather to make sure we are getting amazing food that is affordable. Enjoy!
We had to substitute green zucchini for cauliflower. At the last minute I was informed that what was left of the cauliflower crop had all turned yellow.

Week of May 22nd

As we move at full speed into summer time, the new products keep rolling out. We welcome spring onions to the line up this week and look forward to cucumbers, green beans, yellow zucchini and tomatoes, among others in the near future. For those of you who were expecting cucumbers as planned this week, they just weren’t ripening quick enough to get enough for our CSA this week.
It’s exciting to see watermelons and cantaloupe of all kinds starting to go into the ground. The very first tomatoes are starting to ripen up here in Buellton as they are just starting to trickle out in Goleta. We are definitely a bit behind schedule due to the heavy rains months ago.
Lets enjoy lots of strawberries this week and blueberries while they are going strong. I’ve found some really interesting recipes for smoothies and ice cream which can be indulgent treats with some healthy benefits added. I love paleo blueberry muffins and strawberry smoothies. I tend to lean towards the sweet side of things so it’s good to have some of those ideas ready to go.
I’m watching the apricots ripen on the tree and am really looking forward to having them in our fruit expansions. I’ve also been thinning a TON of peaches and early apples and am getting really excited about all our fruit this year. It will be our first year in real production with our little orchard.

Kale and Wild Rice Salad

Ingredients:
For the Salad:
1 large bunch kale I like to use lacinato kale
1 teaspoon olive oil
Pinch of Kosher salt
1 tablespoon fresh squeezed lemon juice
1 cup cooked wild rice
1 large apple chopped
1 avocado chopped
1/4 cup dried cranberries
1/4 cup toasted slivered almonds
3 ounces goat cheese crumbled
For the Dressing;
¼ cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon fresh squeezed lemon juice
1 teaspoon pure maple syrup
1 teaspoon Dijon mustard
Dash of salt and ground black pepper

Ultimate Zucchini Salad

Ingredients:
4 medium zucchini
2 tbsp. olive oil
2 tbsp. lemon juice
2 small garlic cloves finely chopped
2 tbsp. chopped parsley
1/4 tsp. salt or to taste

Cajun Roasted Cauliflower Steaks with Chimichurri

Ingredients:
Cajun Cauliflower:
1 small head of cauliflower , sliced into 1/2 inch thick slices or chopped into medium size florets
2 tbsp cajun spice blend (2 tsp sweet paprika, 1/3 tsp cayenne, 1/2 tsp black pepper, 1 tsp oregano, 1.5 tsp garlic powder, 1/2 tsp thyme, 1/2 tsp onion powder, dash of pepper flakes
1/2 to 3/4 tsp salt , if using store bought cajun blend, it might already be salted, so you will need 1/4 tsp
2 tsp oil
1 tsp lemon juice
Chimichurri sauce:
1 cup packed parsley or one bunch parsley leaves and tender stems, chopped
1/4 cup basil packed or use cilantro
6 cloves of raw garlic more the merrier
2 tbsp extra virgin olive oil
juice of 1 lime
1 tsp vinegar apple cider or balsamic or red wine vinegar
1/4 tsp salt
1/4 tsp black pepper
2 tbsp or more avocado for creaminess optional

Roasted Cauliflower Taco Recipe with Avocado Crema

Ingredients:
Cauliflower Taco
1 large head of cauliflower, cut into small florets
2 tbsp taco seasoning
2 tbsp olive oil
2 tbsp lime juice (1 lime)
tortillas
cilantro
shredded cabbage (or sub red leaf here)
Avocado Crema
1 avocado
1 garlic clove, minced
1/2 cup sour cream
1/2 tsp salt
1/4 cup lime juice
1/4 cup cilantro (sub parsley, i KNOW it’s not the same, but I truly feel it would be delicious)

Easy Cauliflower Fried Rice Recipe

Ingredients:
1 medium head of cauliflower — cut into florets
2 tablespoons sesame oil — divided
3 eggs — beaten
½ cup white onions — diced
1 cup carrots — diced, replace carrots with orange bell pepper to make it low-carb
2 cloves garlic — minced
1 cup sugar snap peas
2 tablespoons gluten-free soy sauce
fresh black pepper to taste
6 green onions

Spinach and Parsley Pesto

Ingredients:
1/4 cups pine nuts (I like cashews because they are cheaper and still super tasty)
2 garlic cloves
5 cups fresh spinach
2 cups fresh parsley
1/4 cup asiago cheese, grated
Zest of one lemon
Juice of 1/2 a lemon
1/2 teaspoon salt (or more to taste)
1/3 cup olive oil, plus 1 tablespoon

Week of May 8th

I’m becoming very interested in Integrative Medicine lately. That’s an approach to care that puts the patient at the center and addresses the full range of physical, emotional, mental, social, spiritual and environmental influences that affect a person’s health. The fact that food can heal, reverse and prevent disease is something I’ve known for a long time. But to see it in action is truly amazing. If you have a minute, check out Minding Your Mitochondria, on YouTube. It’s about a doctor who reversed her progressive MS and is now living proof of the healing power and magical ways of something we do at least three times a day. And that’s eat delicious food.
As I walked the fields this morning I saw bright white onion bulbs starting to penetrate the soil. Rays of zucchini flowers are blossoming and little cucumbers are dangling from the neatly placed strings holding the plants up. All of this amazing food truly starts from the soil and that’s what we are very diligent about. We have about an acre of compost behind the scenes. That compost not only collects trash (manure, end of grape harvest, ect..) from the community, it sits quietly, hard at work, waiting to nourish the fields and the food we eat.
