Garlic Roasted Cabbage Wedges

(Roasting cabbage brings out the sweet tones and makes it really easy to eat. Try pairing this with some protein for a complete meal.)
Ingredients:
1 large head green cabbage, sliced into wedges vertically from head of cabbage about 3/4 to 1-inch thick
3 1/2 Tbsp olive oil
3 cloves garlic
1 tsp dried marjoram (closest substitute would be oregano)
Salt and freshly ground black pepper
Minced fresh parsley, for garnish (optional)
Fresh lemon wedges or crumbled bacon, for serving (optional)

Lemony Kale Salad with Parmesan Crisps

(Hemp seeds would be a great addition to this salad. Try using Nutritional Yeast instead of Parmesan cheese for a cheesy flavored alternative and extra B Vitamins. Eat more greens!!)
Ingredients:
5 tablespoons aged parmesan cheese, grated
1 head lacinato (dino) kale, stems removed, leaves thinly sliced (sub green kale here)
3 tablespoons fresh lemon juice
1 tablespoon olive oil
1 clove garlic, minced
1 teaspoon whole grain mustard
1/8 teaspoon kosher salt, or to taste
2 fried poached or sunny side up eggs for serving

Creamy Green Smoothie

(Sometimes I need my greens to go down on the sweeter side. And there’s nothing like a smoothie to get a lot of spinach into one serving. I like Whey Cool protein powder from grassfed, free range cows. Make this smoothie yours. Add half an avocado, bulk up the chia and spinach, add some strawberries. Did you know coconut oil can help you lose weight, good for your skin and help keeps you full?)
Ingredients:
1 cup spinach
1 cup unsweetened vanilla almond milk
1 frozen banana
1 tsp chia seeds
1 tsp coconut oil
1 scoop vanilla protein powder
Optional: 1/2 tsp mint extract {not peppermint}

*I also love using Maca Powder. It can be purchased from any of your local heath food stores. Imlak’esh Organics is a great brand, and a local company to support. A teaspoon would be a great addition to this smoothie.)

Ginger Carrot Radish Salad

Ingredients:
2 tablespoons unseasoned rice vinegar
1 tablespoon reduced-sodium tamari or 2 teaspoons coconut aminos
2 teaspoons dark maple syrup
1 teaspoon finely grated ginger root, preferably grated with a rasp-style grater
¼ teaspoon granulated garlic
¼ teaspoon salt
1 tablespoon extra-virgin olive oil
3 cups julienne cut or shredded carrots (about 5 large)
1 cup julienne cut watermelon radishes, or any variety radish including Daikon
1/2 cup flat leaf parsley leaves, cut into tiny ribbons or chiffonade
