Cauliflower Tortillas

Ingredients:
3/4 head cauliflower
2 large eggs
1/4 cup chopped fresh cilantro
juice from 1/2 lime (add the zest too if you want more of a lime flavor)
salt and pepper, to taste

Ingredients: Serves 2
One 1 1/2-pound head of cauliflower
1 1/2 cups water
1 cup whole milk
2 tablespoons vegetable oil plus more for brushing

Roasted Beet and Kale Salad with Maple Candied Walnuts

Ingredients: Makes: 2 as a main, 4 as a side
1.5 lb. beets, peeled and quartered (or cut into bite sized pieces if you’re using large beets)
1 teaspoon extra virgin olive oil
1 cup walnut halves
3 tablespoons pure maple syrup
1/4 teaspoon sea salt
1/8 teaspoon fresh cracked pepper
4 packed cups of curly kale, washed and torn into bite sized pieces
Optional: 1/4 cup goat or Boursin cheese (a diced avocado makes a great vegan alternative to creamy cheeses in salads!)
For the dressing:
3 tablespoons apple cider vinegar
2 tablespoons honey
1 teaspoons balsamic vinegar
1/2 teaspoon dijon mustard
1 garlic clove grated on a Microplane or very finely minced
A pinch of sea salt
1/4 cup extra virgin olive oil

Creamy Zucchini Hummus

(You can find another really good zucchini hummus recipe on our website!)
Ingredients:
1 zucchini, peeled and chopped (about 2 cups)
1/2 avocado
1/4 cup tahini
1/4 cup fresh lemon juice
2 tablespoons olive oil
1/2-inch piece fresh ginger
1/2 garlic clove (or a full one if your friends can handle it)
1/2 teaspoon salt
Pinch of cayenne (optional)

Ginger and Spring Onion Egg Drop Soup

(20 Minute, anti inflammatory ginger and spring onion egg drop soup with zucchini noodles – the perfect soup to warm you up from the inside out.)
Ingredients:
4 cups (1 quart or 946 ml) organic chicken stock
1 1/2 (375 ml) cups water
2 tablespoons coconut aminos (or gluten free soy sauce)
1 tablespoon minced ginger
1/4 teaspoon red chili flakes
1 teaspoon fish sauce*
2 eggs whisked
1/2 cup (1 bunch) spring onions chopped (use only the green parts for low fodmap)
2 large zucchini’s julienned
salt & pepper to taste
