Banana Zucchini Oatmeal Cups

(These lightly sweetened, gluten-free, whole-grain banana zucchini oatmeal cups make the perfect afternoon snack or breakfast on-the-go.)
Ingredients: Makes 12
2 tbsp ground flaxseed or chia seeds + 6 tbsp water (alternatively, you can use 2 eggs)
1/4 cup almond butter (or peanut butter)
1/4 cup pure maple syrup (optional for sweetness)
3 medium to large over-ripe bananas
2 small-medium zucchini, grated (don’t squeeze water out)
1/2 cup almond milk (any milk will work)
1 tsp vanilla extract
3 cups old-fashioned oats
1 tbsp baking powder
1 tsp cinnamon
1/4 tsp salt
Optional add-ins: 1/4 cup chocolate chips and/or walnuts

Cucumber Salad with Dill Dressing

Ingredients:
½ cup Chobani non-fat Greek yogurt
6 T extra virgin olive oil
1/4 cup fresh dill
1 teaspoon minced garlic
3/4 teaspoon garlic salt
salt and pepper to taste
2 English cucumbers
1.5 cups cherry tomatoes
1/2 cup red onion

Arugula Salad with Strawberries, Pistachios and Goat Cheese

Ingredients:
For the salad:
4 cups arugula
1 cup strawberries, sliced
1/2 cup pistachios
1/2 cup crumbled goat cheese
For the balsamic vinaigrette:
1/2 clove minced garlic
1 overflowing tablespoon balsamic vinegar
pinch of sea salt and freshly cracked black pepper
1 1/2 tablespoons extra virgin olive oil

Asian Inspired Vegetarian Lettuce Wraps with Honey Garlic Glaze

Ingredients: Serves 3
3 Tablespoons Coconut or avocado oil
3 Garlic cloves, minced
1 teaspoon Ginger, minced
8 oz. Tempeh, crumbled
3/4 cup Garbanzo beans, thoroughly dried and chopped
2 Tablespoons Soy sauce
1 teaspoon Sriracha hot sauce
