Fresh Green Bean Salad with Asian Dressing

(An Asian take on green beans, this Fresh Green Bean Salad with Asian Dressing is full of Asian flavors and great texture from the Soy-Glazed Cashews.)
Ingredients:
2 lbs fresh green beans, trimmed
1/2 cup cashews
1 tablespoon soy sauce
4 tablespoons rice vinegar
1 tablespoon minced garlic
2 teaspoons minced fresh ginger
1 teaspoon toasted sesame oil
1 teaspoon sugar
2/3 cup fresh cilantro, roughly chopped
1/4 cup chopped green onions

Mini Pepper Nachos

Ingredients:
1 tbsp chili powder
1 tsp ground cumin
1 tsp garlic powder
1 tsp paprika
1/2 tsp kosher salt
1/2 tsp pepper
1/2 tsp oregano
1/4 tsp red pepper flakes (more if you like it hotter)
1 lb ground beef
1 lb mini peppers, halved and seeded
1 1/2 cups shredded Cheddar cheese
1/2 cup chopped tomato
Other toppings as desired (sour cream, olives, chopped jalapeño, avocado, etc.)

Raspberry Oatmeal Cookies

(Store any leftovers in an airtight container on the counter for up to a week—if they last that long!)
Ingredients:
1 cup instant oats (measured like this and gluten-free if necessary)
3/4 cup whole wheat or gluten-free* flour (measured correctly)
1 & ½ tsp baking powder
1/2 tsp ground cinnamon
1/8 tsp salt
2 tbsp coconut oil or unsalted butter, melted
1 large egg, room temperature
1 tsp vanilla extract
1/2 cup honey
6 tbsp fresh raspberries, diced

California-Style Fried Egg Avocado Toast

(Avocado toast is given a fun California-style twist! This ultimate breakfast toast is piled with lots of smashed avocado, fresh veggies, and a beautiful fried egg on top.)
Ingredients:
2 medium ripe avocados, pitted and diced
Juice from 1/2 lime
Salt and pepper to taste
4 slices bread, toasted
1 medium tomato, thinly sliced
1 sweet pepper, thinly sliced
1-2 tablespoons vegetable oil
4 large eggs
2 tablespoons minced fresh parsley

Strawberry Chia Smoothie Bowl

Ingredients:
1 cup organic strawberries
1 frozen banana, sliced
¾ cup milk (rice, almond, cashew, etc.)
1 teaspoon vanilla
1 teaspoon honey (or more, depending on the sweetness of your strawberries and banana)
2 tablespoons chia seeds
sliced strawberries, bananas, and flaked almonds for garnish
