Butternut Squash Enchilada Casserole

Ingredients:
1 medium sized butternut squash, peeled and diced (approx. 2 and 1/2 lbs)
1 yellow onion, sliced
1 poblano or green bell pepper, cored and sliced
2 jalapenos, cored and sliced
2 tablespoons high heat oil (such as sunflower oil)
2 teaspoons cumin powder
sprinkle of salt & pepper
1 (15 ounce) can black beans, drained and rinsed
1/2 cup cilantro, chopped
1 cup fresh baby spinach leaves (optional)
2 cups salsa or enchilada sauce
8 small or 6 large corn tortillas; cut into quarters*
1 and 1/2 cups shredded Mexican cheese**

Sausage, Goat Cheese and Arugula Stuffed Bell Peppers

Ingredients:
3 medium bell peppers, halved lengthwise, seeds and ribs removed
2 teaspoons olive oil
⅔ pound (2 links) sausage of your choice, casings removed
4 ounces goat cheese, softened
2 large handfuls of arugula (about 1½ ounces)
Salt, pepper and/or red pepper flakes, to taste
1½ tablespoons freshly grated Parmesan

Watermelon Radish and Arugula Salad with Citrus Vinaigrette

Ingredients:
For the vinaigrette:
2 tablespoons blood orange juice (or other citrus)
2 tablespoons white wine vinegar like pinot noir
1 shallot, minced
½ teaspoon flaked sea salt
4 tablespoons extra virgin olive oil
For the salad
5-6 cups of arugula
2-3 watermelon radishes thinly sliced, about ¾ cup
¼ cup fresh cilantro leaves
1 avocado, thinly sliced
¼ cup crumbled feta or goat cheese
