Week of July 25th

When watermelon and corn collide I feel like summer has truly arrived. Please note that you most likely will find a worm in each ear of corn. These worms are harmless and can be tossed in your yard for some lucky bird to find. It’s best to discard of the worm as soon as possible so they don’t continue to eat the corn. I feel lucky to be able to offer organic corn. Companies like Bayer and Monsanto are HUGE into Genetically Engineered Corn, touting that it will use less pesticides than normal conventional corn, but pollinators are still taking a big hit. Corn is far from the only crop treated by chemicals, insecticides and fungicides, but it is the largest use of arable land in North America, and pollinators like honey bees rely on corn as a major protein source. The watermelon you receive will be ripe and ready to go. Zucchini Pasta Salad with Corn and Black Beans

Ingredients:
4-6 ounces pasta – penne, linguini, bow tie- or try GF pasta or Chickpea Pasta! ( grain-free)
2 tablespoons olive oil
4 fat garlic cloves- rough chopped
2 shallots ( or half a red onion) – thinly sliced
1 pound zucchini or summer squash ( a mix is nice)
1 ear of corn, or sub red bell pepper
1 lemon, zest and some juice to taste
2-3 cups cooked or canned black beans- or sub any other bean! (1-2 cans)
10 colorful cherry tomatoes, halved
heaping handful arugula (optional)
½ – 1 cup chopped cilantro, Italian parsley or basil
Optional – crumbled feta or goat cheese, pecorino, capers, kalamata olives, pumpkin seeds, chili flakes

Watermelon Gazpacho

Ingredients:
Watermelon – 2 cups (cubed and remove seeds)
Tomato – 1 (chopped)
Cucumber – 1 (peeled and chopped)
Red onion – 1 (finely chopped)
Ginger – 1 tbsp (grated)
Jalapeno – 1 (minced)
Black pepper – 1/2 tsp
Lemon juice – 1 tbsp
Mint leaves for garnishing
Salt to taste
Olive oil – 1 tbsp

Parmesan Tomato Zucchini Bake

Ingredients:
2 medium zucchini, sliced
2 medium yellow squash, sliced
5 medium tomatoes, sliced
1/2 cup quality parmesan cheese, shredded
1/2 teaspoon black pepper
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
1/2 teaspoon Italian spices

Chilled Summer Soup

Ingredients:
3 ears sweet corn
3 cups sungold tomatoes, halved {see notes, approx. 1 1/2 pounds}
1 cup yellow bell pepper, diced medium
1/2 cup white onion, diced medium
1/4 cup highest quality olive oil
2 tablespoons raw apple cider vinegar
1/2 teaspoon sea salt, more to taste
1/4 teaspoon black pepper, more to taste
