Thai Zucchini Noodles with Sesame Almond Ginger Sauce

Ingredients:
SESAME ALMOND GINGER SAUCE
1/4 cup unsweetened creamy almond butter
3 tablespoon coconut aminos
2 tablespoons fresh lime juice
2 tablespoons sesame oil or olive oil
2 tablespoons pure maple syrup
2 teaspoons fresh ginger peeled and grated
1/4 teaspoon red pepper flakes optional
1/8 teaspoon sea salt to taste
THAI ZUCCHINI NOODLES
1 tablespoon coconut oil or olive oil
3 cloves garlic minced*
1 red bell pepper cut into match sticks (sub snap peas)
2 cups red cabbage thinly sliced
3 medium zucchini squash spiralized
2 large carrots peeled and grated
FOR SERVING:
1/3 cup raw cashews
1 lime cut into wedges
1/3 cup fresh cilantro or basil, chopped (parsley would work too!!)
2 teaspoons black sesame seeds

Roasted Golden Beet, Carrot and Chickpea Salad

Ingredients:
4-5 medium carrots, cut into 2″ lengths
4-5 golden beets, peeled and cut into half moons
1 tbsp olive oil (for roasting)
1/4 tsp salt (for roasting)
1 28oz can salt free chickpeas or 2 cups cooked chickpeas, drained
1 small red onion, sliced
1 bunch Italian parsley leaves, coarsely chopped
Juice of 1 large lemon
1 tbsp Dijon mustard
5 small garlic cloves, minced
1/4 cup olive oil
Black pepper (to taste)

Garlic Parmesan Roasted Radishes

(I don’t think there’s any substitute for roasted potatoes, but these radishes are delicious!)
Ingredients:
2 bunches radishes quartered
4 garlic cloves minced
2 teaspoons rosemary fresh or dried
2 tablespoons butter or extra virgin olive oil
sea salt and black pepper to taste
1/4 cup Parmesan Cheese grated

Easy Asian Quinoa Salad

Ingredients:
SLAW INGREDIENTS:
1 (16-ounce) bag shredded red cabbage (or about 4 cups shredded cabbage)
2 cups cooked quinoa (I used red quinoa)
2 cups shredded carrots
2/3 cup thinly-sliced green onions
1/2 cup slivered or sliced almonds, toasted
2 tablespoons sesame seeds
Asian honey vinaigrette (see below)
ASIAN HONEY VINAIGRETTE INGREDIENTS:
1/3 cup vegetable oil (or any cooking oil)
3 Tablespoons rice wine vinegar
1 tablespoon honey (or agave, to make this vegan)
1 teaspoon soy sauce
1/8 teaspoon sesame oil
