Kale and Wild Rice Salad

Ingredients:
For the Salad:
1 large bunch kale I like to use lacinato kale
1 teaspoon olive oil
Pinch of Kosher salt
1 tablespoon fresh squeezed lemon juice
1 cup cooked wild rice
1 large apple chopped
1 avocado chopped
1/4 cup dried cranberries
1/4 cup toasted slivered almonds
3 ounces goat cheese crumbled
For the Dressing;
¼ cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon fresh squeezed lemon juice
1 teaspoon pure maple syrup
1 teaspoon Dijon mustard
Dash of salt and ground black pepper

Ultimate Zucchini Salad

Ingredients:
4 medium zucchini
2 tbsp. olive oil
2 tbsp. lemon juice
2 small garlic cloves finely chopped
2 tbsp. chopped parsley
1/4 tsp. salt or to taste

Cajun Roasted Cauliflower Steaks with Chimichurri

Ingredients:
Cajun Cauliflower:
1 small head of cauliflower , sliced into 1/2 inch thick slices or chopped into medium size florets
2 tbsp cajun spice blend (2 tsp sweet paprika, 1/3 tsp cayenne, 1/2 tsp black pepper, 1 tsp oregano, 1.5 tsp garlic powder, 1/2 tsp thyme, 1/2 tsp onion powder, dash of pepper flakes
1/2 to 3/4 tsp salt , if using store bought cajun blend, it might already be salted, so you will need 1/4 tsp
2 tsp oil
1 tsp lemon juice
Chimichurri sauce:
1 cup packed parsley or one bunch parsley leaves and tender stems, chopped
1/4 cup basil packed or use cilantro
6 cloves of raw garlic more the merrier
2 tbsp extra virgin olive oil
juice of 1 lime
1 tsp vinegar apple cider or balsamic or red wine vinegar
1/4 tsp salt
1/4 tsp black pepper
2 tbsp or more avocado for creaminess optional

Roasted Cauliflower Taco Recipe with Avocado Crema

Ingredients:
Cauliflower Taco
1 large head of cauliflower, cut into small florets
2 tbsp taco seasoning
2 tbsp olive oil
2 tbsp lime juice (1 lime)
tortillas
cilantro
shredded cabbage (or sub red leaf here)
Avocado Crema
1 avocado
1 garlic clove, minced
1/2 cup sour cream
1/2 tsp salt
1/4 cup lime juice
1/4 cup cilantro (sub parsley, i KNOW it’s not the same, but I truly feel it would be delicious)

Easy Cauliflower Fried Rice Recipe

Ingredients:
1 medium head of cauliflower — cut into florets
2 tablespoons sesame oil — divided
3 eggs — beaten
½ cup white onions — diced
1 cup carrots — diced, replace carrots with orange bell pepper to make it low-carb
2 cloves garlic — minced
1 cup sugar snap peas
2 tablespoons gluten-free soy sauce
fresh black pepper to taste
6 green onions

Spinach and Parsley Pesto

Ingredients:
1/4 cups pine nuts (I like cashews because they are cheaper and still super tasty)
2 garlic cloves
5 cups fresh spinach
2 cups fresh parsley
1/4 cup asiago cheese, grated
Zest of one lemon
Juice of 1/2 a lemon
1/2 teaspoon salt (or more to taste)
1/3 cup olive oil, plus 1 tablespoon
