Just a note about egg cartons. We accept all egg cartons back even if they are not our brand. We reuse them here at the farm. They just need to be fairly clean. Please be mindful of your drop off spot. We do not accept returns at Whole Foods and you should consult me before dropping them off at schools.

Basil Chicken Salad with Walnuts

Ingredients:
2 cups cooked chicken, chopped
1/3 cup walnuts, chopped
1/4 cup chopped celery
1/4 cup fresh basil, chopped
3 tablespoon mayonnaise (can sub all yogurt if desired)
3 tablespoon plain Greek yogurt
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper

Zucchini Tomato Basil Salad with Lemon Basil Vinaigrette

Ingredients:
FOR THE DRESSING:
2 tablespoons White Wine Vinegar
2 tablespoons Extra Virgin Olive Oil
2 tablespoons fresh Lemon Juice
1 clove garlic, finely minced
1 tablespoon minced Shallot
2 large Fresh Basil Leaves, sliced thin
FOR THE SALAD:
2 Medium Zucchini, ends removed and discarded
6 large Fresh Basil Leaves, sliced thin
8 ounces Cherry Tomatoes in a variety of colors, sliced in half lengthwise
5 ounces Small Fresh Mozzarella Balls
Salt and Pepper, to taste

Za’atar Roasted Carrots and Green Beans

Ingredients:
1 pound carrots peeled & sliced vertically
1 pound green beans trimmed
1/4 cup olive oil divided
2 tablespoons za’atar divided
1 teaspoon salt divided
1/2 teaspoon pepper divided

Roasted Green Beans with Garlic, Parmesan, and Tomatoes

Ingredients:
1 1/2 pounds green beans, washed and trimmed
1 cup cherry tomatoes, sliced in half
1 tablespoons olive oil (just enough to coat the beans)
4 cloves of garlic, finely minced
3/4 teaspoon kosher salt
freshly ground black pepper
1/4 cup Parmesan cheese

The Best Ever Green Smoothie

Ingredients:
3 Cups Spinach
1 Banana (preferrably frozen) I just toss my brown bananas in the fridge for smoothies later.
1 cup strawberries
1 Coconut Milk
1/2 Cup water
2 – 3 Tablespoons flax seeds (or oil)
Spoonful of Almond Butter
Raw Honey to taste
Chia Seeds
