Ingredients:
1 large eggplant (2 and ¼ pounds)
4 cloves garlic
juice of 1 lemon
salt to taste
¼ cup tahini
¼ teaspoon cumin
1 tablespoon olive oil

Loaded Grilled Eggplant with Creamy Herb Sauce

Ingredients:
Nut Crumble
2 cups raw pecans or walnuts, chopped
2 tablespoons coconut aminos
1 teaspoon extra virgin olive oil
1/4 teaspoon cumin
1/8th teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Dressing
2 tablespoons extra-virgin olive oil
1/2 cup good quality mayonnaise
1 teaspoon garlic powder
1/2 teaspoon sea salt, more to taste
1/4 teaspoon black pepper, more to taste
Pinch Red pepper flakes
Grilled Eggplant
4 Baby or Italian eggplants, sliced in half with the stems kept.
1 tablespoon extra-virgin olive oil, more as needed
2 tablespoons Italian seasoning
2 teaspoons garlic powder
1 teaspoon fine sea salt
1/4 teaspoon black pepper
Garnish
1 tablespoon fresh basil, roughly chopped
1 tablespoon parsley, roughly chopped

Zucchini Fritters with Dill, Feta and Tzatziki Sauce

Ingredients:
1 1/2 lbs small summer squash (about 3 medium zucchini)
1 tsp salt
1/2 C chopped scallions
1/3 C chopped fresh dill
1/2 C crumbled feta
1 large egg
1/2 C all-purpose flour (or GF flour) or dry bread crumbs
1/2 tsp baking powder
1/4 tsp fresh nutmeg

Savory Yogurt with Avocado, Cucumber, Cumin and Dill

Ingredients:
8 oz Plain Greek Yogurt
¼ ripe avocado, skin and pit removed and cut into slices
1 small Persian cucumber, thinly sliced
¼ tsp ground cumin
¼ tsp ground coriander
2 tsp freshly chopped dill

Easy Spinach and Tomato Frittata

Ingredients:
6 large eggs, lightly beaten
salt and pepper, to taste
1 to 2 cups fresh spinach, loosely measured in cup
1 medium tomato, diced small
optionally add extra produce (i.e. onions, mushrooms, zucchini, leftover sweet potatoes, etc.) and/or sprinkle with a handful of shredded cheese
