Week of November 20th

If you are planning on skipping your box next week due to the Thanksgiving holidays please do it now. We are already planning for next week’s feast and that would really help us out. I will post next week’s blog as early as possible in the morning so you can plan your holiday meals if you are going to incorporate the CSA box.
The seasons are turning and that means the shares go from the colors of summer to the greens of winter. These veggies are harvested at the peak of freshness to ensure dense nutrient content and delivered to you within 24 hours. So even though those tomatoes in the grocery store look beautiful in December, you can be sure it’s traveled a distance through time to find you. We are so happy to have you supporting local, organic produce.

Can’t Beet Me Smoothie

Ingredients:
1 cooked beet (see directions below), peeled and quartered
1 cup frozen blueberries
1 small frozen banana
1 cup unsweetened almond milk or other milk of choice
1 cup coconut water
1-inch knob fresh ginger, peeled (use edge of spoon)
1 tablespoon almond butter

Colorful Beet Salad with Carrot, Quinoa & Spinach

Ingredients:
Salad
½ cup uncooked quinoa, rinsed
1 cup frozen organic edamame
⅓ cup slivered almonds or pepitas (green pumpkin seeds)
1 medium raw beet, peeled
1 medium-to-large carrot (or 1 additional medium beet), peeled
2 cups packed baby spinach or arugula, roughly chopped
1 avocado, cubed
Vinaigrette
3 tablespoons apple cider vinegar
2 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon chopped fresh mint or cilantro
2 tablespoons honey or maple syrup or agave nectar
½ to 1 teaspoon Dijon mustard, to taste
¼ teaspoon salt
Freshly ground black pepper, to taste

Ground Turkey Stuffed Delicata Squash

Ingredients:
ROASTED DELICATA SQUASH:
2 delicata squash
2 Tbsp avocado oil
sea salt to taste
GROUND TURKEY:
2 Tbsp avocado oil
1 pound ground turkey
1 medium zucchini squash chopped
1 (2-inch) nub ginger peeled and grated
3 green onion chopped
1 handful baby spinach
3 Tbsp coconut aminos or liquid aminos
1 tsp dried oregano
1 tsp dried basil
sea salt to taste

Tofu Poke Bowl

Ingredients:
Tofu Poke
1/4 to 1/3 cup tamari, coconut aminos or soy sauce
1 tablespoon rice vinegar or lime juice
1/2 tablespoon sambal oelek
1 teaspoon sesame oil
2 cloves garlic, smashed and finely chopped or finely grated
1 inch piece ginger, peeled and finely chopped or grated
1/3 sweet onion, such as Maui onion, julienned
14 oz block organic tofu (firm or extra firm), cut into 1/2 inch cubes
Bowl Filling
3 – 4 radishes, sliced
1/4 red cabbage, shredded
1 avocado, diced or sliced
1 tablespoon sesame seeds, toasted or black
2 scallions, white and green parts, sliced thinly on the bias
lime wedges
1/3 cup roughly chopped cilantro
Dynamite Sauce, optional
1 1/2 cups cooked rice (brown, black or cilantro lime rice) or quinoa

Ingredients:
2 cups sliced cabbage
3/4 teaspoon + 1 1/2 teaspoons coconut oil, divided
1 cup sliced sweet potatoes
1 teaspoon coconut oil

1 soft boiled egg

2 teaspoons cashew butter
1/2 teaspoon apple cider vinegar
