Fennel Kale Chop

Ingredients:
1 large or 2 small fennel bulbs
extra virgin olive oil
sea salt and pepper
1 bunch of lacinato kale, stemmed and chopped
1/2 cup cooked garbanzo beans
1/3 cup golden raisins
1/3 cup fresh grated parmesan cheese
1/3 cup toasted pinenuts

herby lemony vinaigrette
1 garlic clove
1 anchovy filet
1 tsp. dijon mustard
1 tsp. honey or agave
handful of fresh parsley
few basil leaves
juice of one lemon
1/2 tsp. sea salt, to taste
pinch of red pepper flakes
1/2 cup extra virgin olive oil

Quick Crispy Cauliflower

Ingredients:
CAULIFLOWER
1 large head cauliflower (stems/core removed, chopped into bite-size florets)
1 Tbsp avocado oil (or sub other neutral-flavored oil with high smoke point)
1 tsp sea salt
1 Tbsp curry powder or shawarma spice blend
1/2 tsp maple syrup (optional)
FOR COOKING
1-2 Tbsp avocado oil (or sub other neutral-flavored oil with high smoke point)
FOR SERVING optional
Fresh cilantro
Toasted slivered almonds*
Fresh tahini

Kale Caesar Salad {with Parmesan Roasted Chickpeas}

Ingredients:
For the Crispy Parmesan Roasted Chickpeas
1 (15 oz.) can chickpeas (garbanzo beans)
1 Tbsp olive oil
½ tsp garlic powder
½ tsp grated lemon zest
Sea salt and freshly ground pepper to taste
2 Tbsp grated Parmesan cheese
For the Salad
4 cups chopped fresh kale ( stems removed)
1 Tbsp Olive oil
1 Tbsp lemon juice
pinch of salt
4 cups chopped Romaine lettuce
¼ cup grated Parmesan cheese
For the Caesar Dressing
1 Tbsp olive oil
¾ cup plain Greek yogurt
3 Tbsp grated Parmesan cheese
2 Tbsp fresh lemon juice ( approx. the juice of one medium lemon)
1 Tbsp Dijon mustard
1 tsp Worcestershire sauce
¼ tsp garlic powder
Salt & pepper to taste
