Week of April 27th

My dear community members,

You may or may not have noticed the sourdough bread option disappear from the store. Wendy, the owner of Deux Bakery, mentioned that every loaf that leaves her bakery is made by hand with much attention to detail. Our magnified orders became too overwhelming and we need to cap the number of loaves. Wednesday is now full but we still have availability for Thursday/Friday deliveries. Each week we will put a certain number in the store (aside from subscriptions) for purchase and they will be available until reserved. However, if you have a Thursday/Friday delivery please contact me as we probably can add it even if you don’t see it in the store or as a subscription option.

Human error factor: last week we missed several items in the Juice Feast so we are going to bulk those up this week. We are serious about veggies and want you to know that even though the company has expanded, you should still expect your box to be loaded with goodness. Thanks for understanding and please keep in contact if anything goes missing from your box.

Zucchini Ricotta Fritters

Ingredients:
2 medium zucchini washed and thinly cut into sticks
1/3 cup ricotta drained
1 egg
1/2 to 1 cup panko breadcrumb depending of the consistency of your ricotta
4 tablespoons olive oil
salt and pepper to taste
lemon zest from a lemon

Strawberry Cucumber Spinach Salad with Apple Cider Vinaigrette

Ingredients:
FOR THE SALAD:
6 packed cups baby spinach
1 ½ cup English cucumbers (I used the mini variety), sliced
1 cup strawberries, sliced
1 medium sweet apple, cored and chopped into cubes
3 ounces feta cheese, crumbled
¼ cup toasted walnuts
FOR THE VINAIGRETTE:
¼ cup extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp pure honey
1 tbsp dijon mustard

5 Ingredient Sweet Potatoes with Cilantro Gremolata

Ingredients:
4 medium sweet potatoes, scrubbed clean
⅓ cup plus 2 Tbsp. extra-virgin olive oil
1 tsp. kosher salt, divided
⅔ cup fresh cilantro leaves
1 garlic clove, minced
2 Tbsp. seeded and finely chopped jalapeno pepper
Zest of 1 lime
Optional for serving: plain whole-milk Greek yogurt

Sweet Potato Black Bean Chili

Ingredients:
1-2 tablespoons olive oil
1 medium onion, diced small
2 garlic cloves, minced
1 large sweet potato, peeled and diced
2 tablespoons mild chili powder
2 teaspoons cumin
2 teaspoons smoked paprika
1 teaspoon salt
28 ounces diced tomatoes, with their juices OR fire roasted tomatoes

Pickled Sugar Snap Peas

Ingredients:
1 1/4 cups white distilled vinegar
1 1/4 cups cold water
1 tablespoon kosher or pickling salt
1 tablespoon sugar
1 pound sugar snap peas, stems trimmed and strings removed
4 garlic cloves, sliced
1 or 2 small dried chile peppers, slit lengthwise or a couple pinches dried red pepper flakes
