Week of August 12th

My dear community members,

Our CSA box is kind of like a healthy alternative trick or treat bag this week, loaded with all the best sweets. We are picking our melons tomorrow but won’t know which we’ll put in the boxes until Wednesday morning once we sort them out. I hope you get a chance to slow down and enjoy the flavors of summer that are coming straight off the farm.

Updates on two drop locations:
*Adams Elementary School is being relocated to one of our other locations, per request, this week and possibly next. The auditorium is being cleared of rodents. We hope to resume next week but will keep you updated here on the blog.

*UCSB – We are having issues with non-members opening up boxes and/or taking whole boxes. We are going to try and deliver around the corner from our usual spot to see if that helps. We will send you a more specific detailed email if you pick up here. If you can offer a suggestion for a better spot, we’re all ears!

If you’ve moved to a different pickup location because of either of these two issues, and wish to return – you will need to log into your account to update your location.

Zucchini Bread Smoothie

Ingredients:
1 frozen banana (or a date)
1 frozen zucchini (recommend chopping before freezing)
1/3 avocado
1/2 cup Spinach
1 tablespoon nut butter of choice
1 tablespoon flaxseed or chia seed
1/2 tablespoon cacao powder
1/3 cup almond milk
1 scoop chocolate protein powder
Optional: 1 scoop collagen peptides

Chicken Zucchini Enchiladas

Ingredients:
3 cups Shredded Chicken, cooked
2-3 Zucchini, large and thick
2 cups Red Enchilada Sauce
1 small Red Onion, small dice
1 Bell Pepper, small dice
1 tbsp Avocado Oil
1/4 cup Cilantro, chopped

Veggie Burrito Bowl

(A recipe dedicated to inspire and easily adaptable to your tastes.)
Ingredients:
Mexican Rice (recipe from Test Kitchen)
2 large or 3-4 small tomatoes, cored and quartered
1 onion, coarsely chopped
⅓ cup canola or vegetable oil
2 cups long grain white rice, rinsed well
4 cloves garlic, minced
1- 2 jalapeno peppers, stemmed, seeded & minced (we have been making this with only 1 jalapeño recently and adding in extra jalapeño to individual bowls)
2 cups vegetable or chicken broth
1 Tablespoon gluten-free tomato paste
1½ teaspoon salt
½ cup fresh cilantro, chopped (we often skip this too, so adapt to tastes)
1 jalapeño pepper, stemmed and minced, include seeds (this 3rd jalapeño is OPTIONAL, depending on how spicy you want it — we haven’t been adding it lately)
Quick Simmered Black Beans (recipe from[i] Minimalist Baker)[/i (we often double)
1 15-ounce can black beans
½ tsp ground cumin
½ tsp chili powder
kosher salt to taste (1/8 – ¼ tsp)
Roasted Zucchini & Squash
1 zucchini, skin on, sliced into ¼ inch circles, then halved
avocado oil
kosher salt
Guacamole (alternatively, smashed avocado works great too!)
3 ripe avocados
¼ cup cherry tomatoes, seeded and chopped
¼ cup cilantro, chopped
salt and pepper to taste

5-Minute Raw Banana Splits

Ingredients:
BANANAS
4 medium ripe bananas
TOPPINGS
1/2 cup nut butter (divided // we used peanut butter, but for raw, try raw cashew or almond butter)
1/4 cup Coconut Yogurt * (divided // or store-bought, such as Coyo brand)
1/4 cup Rawnola (divided)
1/2 cup berries of choice (divided)
4 tsp hemp seeds (divided)
1/4 cup unsweetened coconut flakes (divided)
