Week of September 30th

My dear community,

If you’ve been a member for a while you know we’ve sporadically partnered with outside brands besides Deux Bakery. When Babba Hummus recently approached me I didn’t really have to think twice. The thought of me opening my CSA box after a long day and immediately dipping some veggies in their amazing hummus sounded too good to pass up. So, we are trying out their top four sellers which will be available in our CSA store by tomorrow (Tuesday). If you currently buy their hummus and want to see another flavor in the store please let me know.
A few weeks ago I mentioned I was moving all my business and personal finances away from banks that support fossil fuels. It’s been quite a journey, and I’m still in the process, but I’m a lot more informed about what I’m doing now. If you’d like to learn more feel free to shoot me an email. If you already have, I will get back to you in the next few days – and THANK YOU for being with me on this journey.
At the farm, I’m in the process of building a few chicken tractors- which is an implement to move chickens around on pasture. This allows them to constantly feed on new grass while they spread their manure on the ground. My goal for the future of our farm is to step up beyond organic and have as many regenerative practices as possible.

Spinach & Ricotta Pasta with Roasted Butternut Squash

Ingredients:
1 butternut squash, about 1.2kg unprepared weight
1 large red onion
2 garlic cloves, crushed
1/2 tsp dried thyme
couple of sprigs of fresh rosemary
2 tbsp olive oil
12 oz pasta (I used wholemeal)
12 oz fresh spinach
9 oz ricotta cheese
1/4 tsp ground nutmeg
parmesan/grana padano cheese, to taste
salt and pepper

Roasted Butternut Squash & Spinach Salad

Ingredients:
1 Medium Butternut Squash
4 Large Handfuls Spinach
2 tbsp Extra Virgin Olive Oil
3 tbsp Walnuts
1 tbsp Pumpkin Seeds
1 tbsp Sunflower Seeds
1.5 tbsp Hemp Hearts
1 tbsp Pure Maple Syrup
1 tbsp Nutritional Yeast
1 tsp Cinnamon
1 tsp Cumin

Heirloom Tomato Cucumber & Avocado Salad

Ingredients:
4 large heirloom tomatoes
1 large cucumber
1 avocado
1/2 red onion
1/2 cup chopped basil
1/2 tsp salt
2 tbsp olive oil
1 tbsp balsamic vinegar (or to taste)
black pepper to taste

White Bean Tomato Cucumber Salad

Ingredients:
1 (15 ounce) can cannellini beans drained and rinsed
1 English cucumber sliced and halved
1-2 cups small tomatoes quartered
1/4 red onion chopped or thinly sliced
1/3 cup olive oil
1/4 cup red wine vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
about 15 cranks fresh-ground black pepper
2-3 handfuls fresh baby spinach coarsely chopped
1-2 tablespoons chopped fresh herbs parsley, basil, oregano, dill, etc.
