Chicken & Spinach Salad Jars

(Make a few jars and eat them all week! Great for eating healthy on the go. And you won’t have to feel bad because there is no styrofoam to-go container to throw away.)
Ingredients: Makes 4 jars
Mustard-Thyme Vinaigrette
5 teaspoons red wine vinegar
5 teaspoons country Dijon mustard
3/4 teaspoon chopped fresh thyme leaves
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
5 tablespoons extra virgin olive oil

Salad Jars
8 ounces cooked chicken breast, chopped
2 cups red grapes, halved
1/3 cup walnuts, roughly chopped
1/3 cup shaved Asiago cheese
4 cups baby spinach, roughly torn

Cheesy Zucchini Quinoa Casserole

(A super healthy and tasty casserole with quinoa and zucchini.)
Ingredients:
3 eggs
1/2 cup quinoa
4 zucchinis, grated and squeezed
1/4 cup chopped mozzarella, plus more for topping
A handful of chopped fresh dill and parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup olive oil

Easy Flaked Almond “Tuna” Salad

Ingredients: Serves 6
1 cup raw almonds, soaked
2 celery stalks, finely chopped
2 green onions, finely chopped
1 garlic clove, minced
3 tablespoons vegan mayo (I use mashed avocado here)
1 teaspoon Dijon mustard
1/2-1 tablespoon fresh lemon juice, to taste
1/4 teaspoon fine grain sea salt, or to taste
Freshly ground black pepper, to taste
Pinch of kelp granules (optional)
1 English cucumber, peeled (if desired) and sliced into rounds

Spinach and White Bean Soup

(A cozy, comforting soup, chock full of fresh spinach, white beans and orzo pasta, made in less than 30 min!)
Ingredients:
1 tablespoon olive oil
3 cloves garlic, minced
1 onion, diced
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
4 cups vegetable stock
2 bay leaves
1 cup uncooked orzo pasta
2 cups baby spinach
1 (15-ounce) can cannellini beans, drained and rinsed
Juice of 1 lemon
2 tablespoons chopped fresh parsley leaves
Kosher salt and freshly ground black pepper, to taste
