If you pick up your share at the farm, please make sure to pick it up before Saturday moving forward. If you need to pick it up after Friday, that’s fine, just be sure to make arrangements with me. We like to donate any unused produce to families in need. If the boxes sit in our fridge too long they become unusable. Please let me know if you have any questions.

FRUIT EXPANSION: STRAWBERRIES and BLACKBERRIES

Parmesan Zucchini and Corn

(A healthy 10 minute side dish to dress up any meal. It’s so simple yet full of flavor!)
Ingredients:
2 tablespoons olive oil
2 cloves garlic, minced
4 zucchinis, diced
1 cup corn kernels, frozen, canned or roasted
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
Kosher salt and freshly ground black pepper, to taste
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves
2 tablespoons grated Parmesan, or more, to taste

Peanut Chicken Zucchini Noodles

(Keep in mind that the sauce ingredients are each important for the flavor. I do not recommend substitutions.
Ingredients:
2 Tablespoons sesame oil (you’ll need more for the peanut sauce below)
2 teaspoons minced or chopped garlic
1 cup shredded carrots
1 cup thinly sliced cabbage (I use red)
1 large bell pepper, thinly sliced (I use red)
3 large zucchini, spiralized into noodles4
2 large chicken breasts, cooked & shredded (about 2-3 cups)2
Toppings: 1 Tablespoon sesame seeds, handful of cilantro, 1/2 cup peanuts, chopped green onion
PEANUT SAUCE
1/2 cup creamy peanut butter
1/3 cup honey
1/3 cup soy sauce (I use reduced sodium)
2 Tablespoons sesame oil1
2 Tablespoons rice vinegar3
2 teaspoons fresh ginger, minced
1-2 teaspoons Sriracha or any hot chile sauce

Roasted Radishes and Carrots with Turmeric
(These roasted radishes have a much milder, smoother flavor and mixed with the carrots and turmeric – you can’t go wrong. We are big fans of this roasted radishes and carrots with turmeric recipe.)
Ingredients:
1½ pounds organic radishes, washed with ends trimmed
12 ounces organic carrots, washed
2 tablespoons organic grape seed oil (or melted coconut oil)
½ of a lemon, juiced
2 teaspoons dried organic parsley flakes
1 teaspoon organic ground turmeric root
1 teaspoon ground black pepper
½ teaspoon real salt or sea salt
