Week of July 5th

Happy July 4th to all. Hope you are enjoying a long weekend! We are working hard here on the farm to get everything ready for the CSA boxes. LOTS of tomatoes this week, hurrah. We are also within weeks of delicious cantaloupes. You can now add honey from San Marcos Farms right into your box. They’ve strategically placed hives on our farm which are thriving. We are so happy to be able to provide a place where the bees can live and work in a healthy habitat.

Little Gem Salad with Lemon Vinaigrette

Ingredients:
1 cup walnut halves
1 tablespoon walnut oil
Kosher salt
1 small shallot, minced
1/4 cup fresh lemon juice
1 tablespoon Champagne vinegar
1/2 cup extra-virgin olive oil
Freshly ground pepper
4 ounces yellow squash, thinly sliced
3 thin red onion slices, separated into rings
4 heads Little Gem lettuce
1/4 cup freshly grated Pecorino Romano cheese, plus more for serving

Heirloom Tomato Salad

Instructions:
2 packages of small heirloom tomatoes
1/2 red onion. thinly sliced
1/3 cup of crumbled feta cheese
3 tablespoon basil, chopped
Juice of 1/2 lemon
3 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper

Pesto Zucchini Noodles with Roasted Tomatoes and Grilled Chicken

Ingredients:
1 pint cherry tomatoes, cut in half
1 tablespoon oil
salt and pepper to taste
1 pound boneless skinless chicken breasts
salt and pepper to taste
4 medium zucchini, sliced into noodles
1/2 cup basil pesto

Cucumber Quinoa Salad

Ingredients:

1 English cucumber, diced
2 cups chilled* cooked quinoa (see this tutorial for how to cook quinoa)
1/2 cup diced red onion
1/2 cup crumbled feta cheese
1/3 cup julienned or roughly-chopped fresh basil leaves
1 batch Lemony Italian vinaigrette (see below)
Lemony Italian Vinaigrette Ingredients:
1/4 cup olive oil
2 tablespoons apple cider vinegar or red wine vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon Italian seasoning, homemade or store-bought
pinch of salt and black pepper
