FRUIT EXPANSION: Blackberries and peaches

Summer Broccoli Tabbouleh

Ingredients:
1 ½ pounds Broccoli Florets – roughly chopped
3 large Ears Corn – husks and kernels removed
2-3 TBS Olive Oil divided
Sea Salt Flakes & Ground Black Pepper
¾ Cup Flat-leaf Parsley – finely chopped, plus more for serving
½ Cup Mint Leaves – finely chopped, plus more for serving
½ pint Grape Tomatoes – halved
½ Cup Pepitas – chopped, can substitute sunflower seeds
1/3 Cup Goat Cheese – crumbled, can substitute feta
Creamy Jalapeno Hummus Dressing:
1 small Jalapeno – seeded, ribbed & roughly chopped*
1 small Clove Garlic – smashed & peeled
½ Cup Hummus store-bought or homemade
1 ½ – 3 TBS Water *
2 ½ tsp Lemon Juice

Peachy Chia Pudding

Ingredients:
4 tablespoons chia seeds
1/4 cup rolled oats
1 teaspoons vanilla
1 cup non-dairy milk
1 cup coconut water
1 tablespoon lemon or lime juice
1 tablespoon maple syrup
1/4 cup coconut flakes
2-3 large peaches
2-3 sprigs mint, for garnish

Summer Zoodle, Avocado and Peach Salad

Ingredients:
4 cups greens
1 avocado, sliced
1 medium zucchini, spiralized
1 ripe peach, sliced
1–2 ears of corn, grilled and cut off the cobb
1 cup cherry tomatoes, sliced in half
1/3 cup crumbled feta cheese (optional)
3 basil leaves

Nachos Reinvented

Ingredients:
20 Mini Sweet Peppers, halved and seeded
1 pound Ground Beef, steak, chicken, or pork, cooked (tempeh or jackfruit for my vegans out there!)
1 tablespoon Cumin
2 tablespoons Chili Powder
1/2 teaspoon Salt
8 oz Cheddar Cheese, shredded
1 Jalapeno, sliced
Toppings such as avocado, tomatoes, sour cream
