Roasted Carrots and Peas

You will never be able to back to store bought prepacked foods after trying this! Fresh carrots and peas are an easy side dish to any meal. Serves 4.


1 1/2 lbs carrots (There's about 1 lb in your box)
2 Tbls olive oil
1 tsp ground cumin
1/2 teaspoon coriander
1/2 teaspoon ground ginger
salt to taste
1 cup fresh peas

Preheat a rimmed baking sheet in a 450 degrees F oven. Quarter carrots lengthwise and toss with olive oil, ground cumin, ground coriander, ground ginger, and salt to taste. Spread on the hot baking sheet and roast 20 minutes; stir in peas and roast 4 more minutes. Toss with chopped parsley (or cilantro) and lime juice.
