Sweet and Sour Baked Cabbage


6 cups coarsely chopped green cabbage (about 1 pound)
2 cups coarsely chopped onion
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
1 large garlic clove, thinly sliced
3 tablespoons cider vinegar
1 tablespoon honey


Combine the first 6 ingredients in a 13 x 9-inch baking dish; toss to coat. Cover; bake at 400F for 30 minutes or until tender, stirring after 20 minutes. Drizzle vinegar and honey over cabbage mixture; toss. This would be great served with salmon.

(consider de-stringing some sugar snap peas, cutting them up and serving them on top)
