Week of February 21st

My dear Community, 

I hope everyone stayed dry and safe during the rain this weekend. Mother Nature bestowed upon us a generous amount of rain last night and throughout the weekend; a much-needed gift for our thirsty crops. However, as grateful as we are for the water, it has temporarily put a damper on our farming operations. The fields are saturated and muddy making planting a challenge, which forces a pause to our usual bustling activity. The cold weather accompanying the rain also presents a hurdle, slowing down the growth of our current crops and making it harder to harvest. We are really stretched this week and will look to our neighboring farms to keep the CSA box running through winter. Your continued support means the world to us, and we'll keep you updated on our progress as we work towards bringing you the freshest and tastiest produce. I'll be staying warm inside with thoughts of strawberries, sugar snap peas and zucchini dancing in my head.

Sesame Chicken Cabbage Crunch Salad

(Don't forget to read the notes. She gives so many ways to switch it up and use a lot of the items we have in the box this week.)
Ingredients:
For the chicken:
Grilled Sesame Chicken
For the salad:
4 cups shredded green cabbage
2 cups shredded red cabbage
1/2 cup diced green onion
3/4 cup freshly diced cilantro
1 cup shredded carrots (bagged or cut into matchsticks for excellent crunch!)
1 red bell pepper, thinly julienned
1 jalapeno, seeded and diced
For the dressing:
1 batch Sesame Ginger Dressing
For serving:
1/3 cup toasted sliced almonds
1/3 cup roasted cashews halves
Sesame seeds
Extra cilantro
Extra green onion
A few jalapeno slices
Optional: Crispy wonton strips

Collard Green Paleo Slaw (Super Slaw)

Ingredients:
1/2 bunch collard greens, rinsed and thinly sliced
1/2 small red cabbage, finely shredded
1/2 apple, cored and julienned
1 large carrot, julienned
2 green onions, thinly sliced
2 tbsp sesame seeds, optional
Salt and freshly ground pepper, to taste
2 tbsp Paleo mayonnaise
1 tbsp apple cider vinegar

Cabbage Stir Fry

Ingredients:
3 Tbsp avocado oil
1/2 medium-sized yellow onion sliced
1 head green cabbage sliced
4 large cloves garlic minced
1 Tbsp fresh ginger peeled and grated
1/2 tsp ground cumin
3 Tbsp liquid aminos or coconut aminos, to taste
2 large carrots grated
3 stalks green onion chopped

New Potato Salad

Ingredients:
For the dressing
1/2 cup half fat creme fraiche or vegan oat creme fraiche (sub greek yogurt)
1 tbsp Dijon mustard
1 tbsp white wine vinegar
2 tsp dried dill or fresh dill
For the salad1
1 pound baby potatoes
8 spring onions , finely diced
7 oz Radished radishes, finely sliced
3 tbsp gherkins , sliced (sub pickles here)
2 tbsp flat leaf parsley , chopped
1 tbsp fresh chives , chopped
salt and pepper to season
Optional
4 hard boiled eggs , chopped
