Basil, Tomato, and Goat Cheese Pasta Sauce

2-3 T. Olive Oil
2 Cloves Garlic minced
1 Lb. Cherry Tomatoes (or other type tomato), diced
1 Large Bunch Basil chopped
5 oz. Goat Cheese Log

Heat olive oil in a skillet on medium heat.  Add garlic and cook for 1-2 minutes.  Toss in diced tomatoes and chopped basil; cook until basil wilts.  Break up the goat
cheese into skillet and stir until it completely melts.

Top your favorite stringed pasta (spaghetti, linguini, etc.) or even spaghetti squash with sauce.
