Green Goddess Dressing


3/4 c organic, low-fat sour cream;
1/2 c minced parsley,
2 T extra virgin olive oil,
2 T freshly squeezed lemon juice,
2 T fresh dill,
1 t maple syrup or sweetener;
2 T minced scallion, white and green parts,
1/4 t salt,
freshly ground pepper to taste


Combine all ingredients in a blender. Blend for 1 to 2 minutes. Taste and adjust seasonings. Keep refrigerated until ready to use.
