Zucchini Hummus

2c chopped zucchini
2 cloves garlic
juice of 1 lemon (2T)
1/4c olive oil
1/2c tahini
1t salt
2T chopped parsley leaves
1/3c chopped sun-dried tomatoes
pinch paprika


Process all ingredients except paprika in food processor until smooth. Pour mix into bowl, allow to rest for at least 10 min. Stir well. Serve with paprika and a drizzle of extra olive oil.
