Week of September 23rd

My dear community,

I couldn’t let this week go without a heartfelt note about Notorious RBG. The world lost a force. Despite so many odds, she rose above and fought for it all, doing so much for gender equality and women’s rights, and known of course for her passionate dissents while serving as the second ever female appointed Supreme Court justice. Make sure to get out and vote and tell them Ruth sent you.

We’re experiencing a shift here in Buellton. It went from oven-like temperatures in green houses to really cold nights. We are picking our apple orchard but the trees are still very young with not much to yield. I have a friend who helps run Gopher Glenn Organic Apple Farm. They picked and dropped off delicious, crispy Jonogold apples for us to enjoy. I’m looking forward to learning how to prune all our fruit trees this year.

Several of you inquired about what I’m doing with my bank as I mentioned last week. I will give an update about this next week.

Southwestern Zucchini Noodle Bowl

Ingredients:
For the cilantro lime vinaigrette:
1 shallot, minced
2 cups packed fresh cilantro leaves, stems removed
1 large clove garlic
2 tablespoons red wine vinegar
1 tablespoon fresh lime juice
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup olive oil
For the bowls:
2 medium zucchini, spiralized
1 ear corn
14 ounces black beans, rinsed and drained
1 cup halved grape or cherry tomatoes
1/4 red onion thinly sliced
1 large avocado, sliced
1/4 cup queso fresco
Cilantro, for garnish

Quick Pickled Carrot

Ingredients:
US Customary – Metric
PICKLED CARROT
~1 lb carrots, tops removed, peeled if needed, sliced into sticks
BRINE
2/3 cup distilled white or apple cider vinegar
1/3 cup water (for stronger flavor, sub vinegar)
1/2 tsp sea salt
1 Tbsp organic cane sugar (or stevia to taste)

Carrot Zucchini Fritters

Ingredients:
2 medium zucchini, grated
2 medium carrots, grated
1/2 sweet onion, finely chopped
2 eggs
1/4 teaspoon black pepper
1/4 teaspoon sea salt
1 teaspoon dill, chopped
2 tablespoons cooking oil (I used coconut)
unsweetened applesauce

Healthy Vegan Burrito Bowl

(The recipe personally has too many ingredients for me, but I think you can pick and choose a few and make something really delicious.)
Ingredients:
“Meat”
1 cup walnuts
1/4 small onion
8 oz cremini mushrooms
1 cup cauliflower florets
1 teaspoon salt
1 tablespoon garlic herb seasoning
1 teaspoon black pepper
1/2 teaspoon coriander
1 teaspoon cumin roasted if you have it
1 teaspoon paprika
1/2 teaspoon crushed red pepper
1 teaspoon garlic powder optional
1 teaspoon onion powder optional
1 1/2 tablespoons low sodium soy sauce
1 tablespoon tomato paste sub 1 1/2 tbsp crushed tomato
1 tablespoon olive oil
Tomato Salsa
2 large tomatoes diced
1/4 red onion diced
1 diced jalapeno optional
1 tablespoon cilantro diced
1/4 lime
Beans and Corn
1 15 oz can black beans drained and rinsed
1 cup corn frozen or canned
2 tablespoons olive oil
1 clove garlic minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic herb seasoning
1/2 teaspoon cumin
