Week of October 5th

My dear community,

I wanted to remind everyone that we are now selling Baba Hummus in our CSA store. Dip those veggies right into that delicious hummus as soon as you open your box. Now that’s my kind of fast food.

I’ve spent this past week appreciating my new bank, one that scrutinizes all loans making sure they are good for the community. It made me realize that I let filing paperwork slip over the last year after our baby Seth was born. It seemed like a big task to tackle at first, but staring at smoke filled skies and a struggling democracy has made the endeavor that much more enjoyable out of necessity.

We’ve been really short on eggs lately. If you’re a current subscriber chances are we’ve had to issue a credit lately. That will change but is taking more time than I thought. Our newest flock is delayed in starting to lay as our older flock slows down for the season. We have almost 100 new chicks growing and hope to fill all egg needs towards the new year. I’m putting so much more thought and effort into how I can build and nourish our land here. Lastly I wanted to mention that we grew our first crop of garnet yams here in Buellton this year. They aren’t the giants we’ve had in the boxes before but I’ve actually found the smaller ones roast up quickly and have such a sweet earthy flavor. I’m excited to share them with you.

Easy Black Bean Sweet Potato Tacos

Ingredients:
8-10 tortillas (see notes)
2 14 oz can black beans, drained
2 sweet potatoes, diced (skin on or peeled)
1 Tablespoon oil
1/2 teaspoon (each) cumin, paprika, chili powder
1/2 teaspoon garlic powder
salt to taste
PICKLED ONIONS
1 red onion, sliced thin
1 1/2 cups distilled vinegar
1 Tablespoon coconut sugar
pinch of salt
GUACAMOLE
1-2 avocados, smashed
1 lime, juiced
salt to taste

Zucchini + Yam Fritters with Garlic Herbed Yogurt

Ingredients:
2 zucchini
½ yam, peeled
2 garlic cloves
2 green onions
1 tsp sea salt
2 tbsp freshly chopped parsley
2 tbsp lemon juice
Zest of ½ lemon
½ cup oat flour (you can sub for chickpea flour)
¼ cup nutritional yeast
1 egg

Greek Chickpea Avocado & Cucumber Salad

Ingredients:
1 can chickpeas drained and rinsed
1 english cucumber
1 avocado
1 cup cherry tomatoes
1/3 cup crumbled feta cheese
3 tbsp diced red onion about 1/4 of a red onion
1/3 cup pitted kalamata olives optional
Greek Vinaigrette
1/2 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
1 clove garlic
1/4 tsp dried dill
1/4 tsp dried oregano
1/4 tsp salt
1/8 tsp black pepper

Summer Tomato & Cantaloupe Salad

Ingredients:
VEGGIES
1 cup thinly sliced cucumber
1 cup cherry tomatoes (thinly sliced)
0.5 medium red onion (thinly sliced)
2 Tbsp olive or avocado oil
4 tsp apple cider vinegar
2 healthy pinch each sea salt + black pepper
DRESSING
6 Tbsp lime juice
2 Tbsp maple syrup
2 pinch sea salt
2 Tbsp olive or avocado oil
CANTALOUPE
6 heaping cups cantaloupe (cubed or scooped with a melon baller // ~1 cantaloupe as original recipe is written)
4 Tbsp fresh mint
